Quick Service is part of Food and Beverage .
Quick service are the outdoor carts(ice cream, beer, snacks) and bakeries etc (fast food....).
Everything except the sit down restaurants.
If you are an international, u usually start in quick service (and seating/greeting), before you move on to be a server in the sit down restaurant.

I'm working full service F&B as a host apparently according to the thing, anyone know if there's the opportunity for me to become a server after I start as a host?

I don't know whether you are on the IP or CP, but I know that as an IP you become a server after a while, that may take from 2 up to 10 months, all depending on staffing... As for the CP, I think you have to stay in the role given to you, but not sure about this! Maybe jimbob knows, if he's lurking around here somewhere... or some other CPs/Americans...
